GY cacao paste is made from the highly prized Ecuadorian Arriba Nacional bean (aka cacao Arriba, or cacao Nacional). Arriba is a fine flavoured bean characterized by fruity and floral notes, and unique to Ecuador. Our paste is certified organic, Rainforest Alliance certified, common allergen-free, non GMO, naturally vegan and delicious!.
The beans are hand-selected, fermented and dried to perfection. The skins are removed from the dried bean (aka winnowed) then ground into a liquid, tempered, cooled into a solid form and kibbled for ease of use. Our cacao is lab tested, clean and pure, never “Dutched” nor treated with toxic chemicals. GY cacao paste is low temperature processed from start to finish to maximize quality and taste while maintaining nutritional integrity.
