Salt is not harvested from the current ocean water but instead originates from a supply of salt created over a million years ago when tectonic plate movement buried salt deposits deep beneath the Andes mountains. These man-made salt pans fill with brine channeled from a deep underground spring. Eventually, the water naturally evaporates due to the intense sunlight and leaves behind crystallized salt. The salt is then hand-harvested by local families who manage their particular pan. When all the salt crystals are removed, the pan is filled with the salt water again. These salt pans have been operational for more than 500 years and are believed to be originally constructed by the Wari civilization, which pre-dates the Inca.
