Ojio Fleur de Sel – Off the coast of France, there are regions where the sun and wind evaporate sea water, exposing the crystalline salt flats below. The Guérande Peninsula is an area in western France that is surrounded by water. The peninsula is surrounded by the Atlantic Ocean and overlooks the “Pays Blanc” named after the salt marshes. Guérande has a warm and temperate climate with a significant amount of rainfall, about 32 inches, each year.
Ojio Fleur de Sel is hand shaved off the flats and sun dried at the source, just as it has been since the 17th century. The result is a delicate, mineral rich salt that is more complex than conventional table salts.
